Pork and Apple Sausage Rolls

Golden, flaky pastry meets juicy pork sausage and the subtle sweetness of apple in these irresistible sausage rolls, made with quality pork from The Local Butcher in Blenheim. Whether you're prepping for a picnic, party platter or easy lunchbox filler, these rolls are a Kiwi crowd-pleaser you’ll want on repeat.

What ingredients do I need for Pork and Apple Sausage Rolls?

Filling:

  • 500g good quality plain pork sausages (casings removed)

  • ½ red onion, finely diced

  • 1 garlic clove, crushed

  • 1 red apple, grated (juice squeezed out)

  • 1 tbsp chutney or HP sauce

  • 1 tbsp fresh sage, chopped (or 1 tsp dried)

  • 1 tbsp fresh parsley, chopped

  • Salt and cracked pepper to taste

Pastry:

  • 2 sheets flaky puff pastry

  • 1 egg, whisked (for egg wash)

  • ¼ cup sesame seeds (optional)

 

How to make pork and apple sausage rolls

Step 1: Prep the filling
In a large mixing bowl, combine onion, garlic, grated apple, chutney, herbs, and seasoning. Squeeze the sausage meat from the casings and add to the bowl. Mix well until everything is evenly combined.

Step 2: Prepare the pastry
On a lightly floured surface, roll out each pastry sheet to roughly 30 x 25cm. Cut each sheet lengthwise so you end up with 4 long rectangles.

Step 3: Assemble the rolls
Divide the sausage mixture into four portions. Shape each into a log and place along one edge of each pastry strip. Brush the opposite edge with egg wash, roll up tightly, and seal with the seam side down.

Step 4: Cut and bake
Cut each long roll into 3–4cm pieces. Prick the tops with a fork, brush with more egg wash, and sprinkle with sesame seeds if using.
Place on a lined baking tray and bake at 200°C (fan bake) for 25–30 minutes or until golden and puffed.

 

Tips for better sausage rolls

  • Choose quality meat: Ask your local butcher for plain pork sausages with a higher meat content for the best flavour and texture.

  • Grate and squeeze: Removing the juice from the grated apple stops the filling from going soggy.

  • Freeze ahead: These rolls freeze well, baked or unbaked—perfect for school lunches or last-minute guests.

 

Serving and pairing suggestions

These pork and apple sausage rolls are ideal served warm with a dollop of your favourite chutney or mustard. Add them to a party platter with pickles and cheese for the perfect savoury snack. For a bigger meal, serve alongside a simple green salad or kumara wedges.
